Ingredients :
1oz Calvados
1oz Brown Butter Rum 🧈
1oz Caramelized Simple Syrup 🍭
1oz Lemon Juice 🍋
Instructions:
To make caramelized simple sugar :
Cook sugar on stove with a splash of water until a deep amber color is reached, turn off the heat before you reached your desired shade as it will continue cooking. Add equal amount of water and stir until dissolved. Let cool before bottling.
To make brown butter fat washed rum:
Brown 4 tablespoons of butter in a pan, and add to a jar along with one cup of aged rum. Shake and let sit out for at least one hour before transferring to the freezer until the butter is solidified. Strain through a coffee filter.
For the cocktail:
Combine all ingredients in a shaker with ice. Shake for 10 seconds before double straining into a glass over an ice sphere.
